Salcici (blubber cakes) – Asociaţia Pro-Mehedinţi

Ingredients: 1 kg of flour type 400, 500gr of raw pork fat, 2 whole eggs and two yolks, 0,5L of white wine, grated lemon peel, one teaspoon of salt, one tablespoon of sugar, plum jam, powdered sugar for top dressing

Method of Preparation: Wash the raw (uncooked) pig fat in cold water, clean it from the veins and grind it on the meat machine. A mix of smooth dough is made from flour, eggs, salt, sugar, grated lemon crust and wine. The flourish surface is covered with flour in order for the dough not to
stick, then it’s spread until it becomes very thin and then cover with 1/4 of pork fat. Fold from right to the left, from the bottom to the top, to look like a book. Leave the dough in the cold for about half an hour, and then repeat the procedure three more times until all the fat is used. In the end, settle to a thickness of one centimeter, cut the squares, fill the plum jam, and fold, like a small book. Bake the cookies in the oven at 200 degrees for about half an hour. In the end, while the cookies are hot, powder them with sugar. This recipe is being prepared in the Bor District and also in Mehedinti County.
