Vanilla cakes – Asociaţia Pro-Mehedinţi

Recipe for: 4-6 persons

Ingredients: 200g of grease, 4 tablespoons of sugar, 1 yolk and 1 whole egg, lemon juice and grated lemon peel, 500g of flour (or 100g of ground walnuts and 400g of flour)

Method of Preparation: Whisk the grease until it becomes like foam, then add yolk and one whole egg, juice and grated lemon peel. Add flour, mix the dough and leave it to rest. Then spread the dough on the board sprinkled with flour and make it a centimeter thick, and then make the shapes with the molds. Place them in a greased baking pan and bake at 180 degrees for about 15- 20 minutes, make sure they stay white. Coat the baked vanilica with jam and compose them two by two, then roll in powdered vanilla sugar.

Special tips: Traditionally, apricot jam is used, but some other can also be used. Before serving, they have to wait for at least one day, preferably for a few days, in a cardboard or tin box.
