Recipe for: 4 persons
Ingredients: 8 eggs, 1 bowl of grated cheese (the cheese can be sweet or sour or a combination of the two types, according to preferences), 1 teabag of baking powder or 1 cube of yeast, sugar according to taste, semolina as needed
Method of Preparation: The eggs are mixed together with the sugar and a little salt. The baking powder is extinguished in a little soda or mineral water. If the yeast is used instead of the baking powder, it dissolves in a little warm water. The cheese and a little semolina are placed over the egg and sugar mixture, it is mixed thoroughly, and then the baking powder or the yeast dissolved in warm water is added. Everything is mixed again and the semolina is added until a homogeneous composition, as thick as the one for the cake is obtained. The composition is placed in the baking tray and baked in the oven until it is browned on top.
Special tips: A long time ago, instead of semolina, fine ground corn was used.
