Recipe for: 8-10 persons
Ingredients: two (2) of egg whites, 160 gr of sugar, 300g of ground walnuts, 2-3 teaspoons of lemon juice, 100 gr of finely cut walnuts, a pinch of salt.
Method of Preparation: Whip well the egg whites for 10 minutes until you make a solid cream. Add salt and whip for 1 more minute. Gradually add the weighed sugar – spoon by spoon. Keep mixing for 10 more minutes until all sugar is melted; add lemon juice and mix for 5 more minutes. Steam cook the whipped egg whites for about 45 minutes, stirring occasionally (stir well every 3-4 min.). Pour the cooked mixture into a bowl and leave to cool. Add ground walnuts and well merge with a mixture of egg whites. Shape “orasnica” as rolls, press each slightly by hand, roll them in the finely chopped nuts and put on a baking pan lined with baking paper and bake, i.e. dry in the oven for 20 minutes. It is very important to heat the oven well to 150 degrees, and after putting the cookies to reduce the temperature to 120 degrees. Then open the oven and further reduce the temperature to a maximum of 80 degrees and slowly dry the cookies next 30 to 40 minutes, until they are light brown. Take care not to burn them.
Special tips: Make “orasnica”a day or two earlier than the day when you plan to serve them as a dessert, and, if you wish, you can serve them sprinkled with powdered sugar.
