Recipe for: 4-6 persons
Ingredients: 1kg dried plums or other fruits (poame), 1 cup of sugar, 5 spoons of oil, 5 tablespoons of wheat flour
Method of Preparation: The oil is poured in a pan, on fire, until it gets hot, then the flour is added while stirring continuously. When the flour gets a golden color, hot water is gradually added. The composition is gently and constantly stirred in order to avoid the lumps. Separately, the sugar is placed on fire in a saucepan. When the sugar is caramelized, a little glass of brandy is added and after that the composition is mixed until it becomes homogeneous. The burnt sugar and brandy mixture is added on top of the flour sauce, gently mixing them. The dried plums or fruits are added and the whole composition is left on fire until the fruits are soaked.

Special tips: „Poame” are fruits of all kinds (apples, pears, quinces, etc.) cut into slices and dried in the dark for a few weeks. In the old days, all the fruits left after the preparation of the jams, the compotes were dried and kept for the winter.
