Beaten Beans – Asociaţia Pro-Mehedinţi

Recipe for: 4-6 persons

Ingredients: 1 kg of dry beans, 2-3 onions, sweet paprika, 3-4 garlic cloves, 5-6 fresh tomatoes or
from broth, salt according to taste

Method of Preparation: Beans are boiled. After it boils several times, the water is thrown away, fresh water is poured and the beans are boiled again. They are boiled until they begin to crush slightly. When it’s well boiled, the water is thrown away. They are beaten with a whisk until a paste is formed. Oil and salt according to taste are added, as well as the smashed garlic and a pinch of sweet paprika. The onion is tiny chopped and roasted in oil until it rises. A pinch of sweet paprika is added and then the composition is well mixed. The beans paste is put into bowls where it is left to cool. After that, on top is added the fried onion.

Special tips: A fasting recipe which is frequently cooked in all areas of Mehedinti, with little differences when it comes to frying. This is the recipe used by people in Godeanu area. In Șișesti area, after the onion is browned, fresh peeled tomatoes and chopped cubes or tomatoes from the broth are added. The mixture is left on fire until it decreases and the oil is selected on top. The composition is added over the beans left to cool in the bowls.The elders also called it outworn beans.
